Orange Basil Cole Slaw with Apricots & Pine Nuts

Ingredients
- 6 Tbs. pine nuts, about 2 oz.
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 Tbs. chopped fresh basil
- 1 Tbs. sugar
- 1 tsp. orange zest
- 1 tsp. kosher salt
- 1/2 tsp. coarsely cracked black pepper
- 1 (16 oz. ) pkg. cole slaw mix
- 1/2 cup dried apricots, about 4 oz., chopped

Instructions
- Arrange pine nuts in single layer on microwave-safe dish. Microwave nuts 1 minute, then continue to microwave in 30 second intervals until lightly toasted. Reserve.
- In serving bowl whisk olive oil, vinegar, basil, sugar, orange zest, salt and pepper until blended.
- Add cole slaw mix, apricots and reserved nuts. Toss until evenly coated.
- Refrigerate until ready to serve.
