    How to Pick a Watermelon

    There's nothing quite as disappointing as bringing home a beautiful green watermelon only to find it has no flavor because it isn't ripe yet. Here's some pointers on how to pick a watermelon for your fruit salad:

    • The watermelon should feel heavy for it's size.
    • Look for a yellow spot where the watermelon rested on the ground as it grew. When this spot is creamy yellow, the watermelon is ripe.
    • A ripe watermelon will have a hollow sound when you tap it.

    Ingredients

    • 1 Tbs. olive oil
    • 1 Tbs. fresh mint leaves, chopped
    • 1 Tbs. lime juice
    • 1 tsp. lime zest
    • 1/4 tsp. kosher salt
    • 3 cups of your favorite summer berries, such as blueberries, raspberries, blackberries and strawberries
    • 2 cups cut-up seedless watermelon
    • 1 jalapeno, seeded and minced, about 2 Tbs.

    Instructions

    • In serving dish combine olive oil, mint, lime juice, lime zest and kosher salt.
    • Stir in berries, watermelon and jalapeno, stirring until evenly coated.
    • Garnish with fresh mint and sliced lime, if desired.

    Notes

    Makes 5 cups.
