Orange Basil Cole Slaw with Apricots & Pine Nuts

Orange Basil Cole Slaw is an easy recipe for a summer side dish. Just season your cole slaw mix with an orange and basil scented vinaigrette, stir in apricots and toasted pine nuts and you’ve got the perfect crunch, bursts of sweetness and nutty flavor in every mouthful!

Ingredients

  • 6 Tbs. pine nuts, about 2 oz.
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 Tbs. chopped fresh basil
  • 1 Tbs. sugar
  • 1 tsp. orange zest
  • 1 tsp. kosher salt
  • 1/2 tsp. coarsely cracked black pepper
  • 1 (16 oz. ) pkg. cole slaw mix
  • 1/2 cup dried apricots, about 4 oz., chopped

Instructions

  • Arrange pine nuts in single layer on microwave-safe dish. Microwave nuts 1 minute, then continue to microwave in 30 second intervals until lightly toasted. Reserve.
  • In serving bowl whisk olive oil, vinegar, basil, sugar, orange zest, salt and pepper until blended.
  • Add cole slaw mix, apricots and reserved nuts. Toss until evenly coated.
  • Refrigerate until ready to serve.
