There’s a trend happening on Pinterest and I’m hopping on the bandwagon! Just combine uncooked pasta and all the other ingredients in a pot, cook and serve! I created One Pot Penne Pomodoro, a pasta that’s flavored in a light buttery tomato broth with garlic, onion and lots of tomatoes. As the penne cooks it forms it’s own sauce, all in one pot! Perfect for Meatless Monday. Perfect for any day and rather amazing too!
One Pot Penne Pomodoro
8 ounces uncooked penne pasta
4 plum tomatoes, chopped, 2 cups OR 1 pint grape tomatoes, halved lengthwise
2 1/2 cups water
1 can (14.5 oz.) diced tomatoes with basil and oregano
4 Tbs. butter
1 Tbs. chopped garlic, about 4 large cloves
1 tsp. dried basil
1 tsp. kosher salt
1/4 tsp. pepper
shaved Parmesan cheese
1. In pot with tall sides, preferably a non-stick pot, combine pasta, chopped tomatoes, water, diced tomatoes with their juices, butter, garlic, basil, kosher salt and pepper.
2. Bring to a boil over medium-high heat.
3. Boil 10 minutes or until pasta is al dente and a brothy sauce has formed, stirring occasionally.
4. Serve with shaved Parmesan cheese.
Makes 4 servings, about 8 cups.
