One Pot Penne Pomodoro is an easy pasta recipe in a light buttery tomato broth. As the penne cooks it forms it’s own sauce, all in one pot!

- 8 ounces uncooked penne pasta
- 4 plum tomatoes, chopped, 2 cups OR 1 pint grape tomatoes, halved lengthwise
- 2 1/2 cups water
- 1 can (14.5 oz.) diced tomatoes with basil and oregano
- 4 Tbs. butter
- 1 Tbs. chopped garlic, about 4 large cloves
- 1 tsp. dried basil
- 1 tsp. kosher salt
- 1/4 tsp. pepper
- shaved Parmesan cheese
- thinly sliced fresh basil leaves , Serving Suggestion
In a pot with tall sides, preferably a non-stick pot, combine pasta, chopped tomatoes, water, diced tomatoes with their juices, butter, garlic, basil, kosher salt and pepper. Bring to a boil over medium-high heat.
Boil 10 minutes or until pasta is al dente and a brothy sauce has formed, stirring occasionally.
Serve with shaved Parmesan cheese and fresh basil, if desired.
Makes 4 servings, about 8 cups

- Stir in chopped fresh basil before serving
- Substitute white wine for some of the water
- Make recipe with 1 pint of grape tomatoes, halved lengthwise
