Ingredients

  • 8 ounces uncooked penne pasta
  • 4 plum tomatoes, chopped, 2 cups OR 1 pint grape tomatoes, halved lengthwise
  • 2 1/2 cups water
  • 1 can (14.5 oz.) diced tomatoes with basil and oregano
  • 4 Tbs. butter
  • 1 Tbs. chopped garlic, about 4 large cloves
  • 1 tsp. dried basil
  • 1 tsp. kosher salt
  • 1/4 tsp. pepper
  • shaved Parmesan cheese
  • thinly sliced fresh basil leaves , Serving Suggestion

Instructions

  • In a pot with tall sides, preferably a non-stick pot, combine pasta, chopped tomatoes, water, diced tomatoes with their juices, butter, garlic, basil, kosher salt and pepper.
  • Bring to a boil over medium-high heat.
  • Boil 10 minutes or until pasta is al dente and a brothy sauce has formed, stirring occasionally.
  • Serve with shaved Parmesan cheese and fresh basil, if desired.

Notes

Makes 4 servings, about 8 cups
Swirls of Flavor Recipe Tips
  • Stir in chopped fresh basil before serving
  • Substitute white wine for some of the water
  • Make recipe with 1 pint of grape tomatoes, halved lengthwise
  • Top with cooked shrimp or cooked sliced chicken
