Oven Roasted Plum Tomato Sauce is a perfect and fabulously delicious way to enjoy all of those juicy fresh tomatoes. Oven Roasted Plum Tomato Sauce
3 lbs. orange and/or yellow plum tomatoes, chopped, 7 cups
2 onions, chopped, 2 cups
1/4 cup olive oil
1/4 cup white wine or chicken broth
2 Tbs. chopped garlic, about 6 large cloves
2 tsp. dried basil
1 tsp. kosher salt
1/2 tsp. pepper
8 ounces of your favorite pasta, cooked and drained
2 Tbs. chopped fresh basil
shredded Parmesan cheese
1. Preheat oven to 425F.
2. Combine tomatoes, onions, olive oil, wine, garlic, basil, salt and pepper, tossing until evenly coated. Arrange on baking sheet with low sides.
3. Roast 45 minutes, stirring once.
4. Stir in fresh basil and toss with hot cooked pasta. Sprinkle with shredded Parmesan.
Makes 4 cups sauce. Makes 8 cups tossed with pasta/4 servings.
