What is pasta al pomodoro?
In Italian, pomodoro means tomato. Pasta al pomodoro is an Italian recipe when pasta is prepared using fresh tomatoes, basil, olive oil and other seasonings to make a pasta dish. This type of pasta recipe is supposed to be quick to make with a light brothy tomato sauce and not a pasta dish with a heavy tomato sauce that could take hours to cook.

- 8 ounces uncooked penne pasta
- 4 plum tomatoes, chopped, 2 cups OR 1 pint grape tomatoes, halved lengthwise
- 2 1/2 cups water
- 1 can (14.5 oz.) diced tomatoes with basil and oregano
- 4 Tbs. butter
- 1 Tbs. chopped garlic, about 4 large cloves
- 1 tsp. dried basil
- 1 tsp. kosher salt
- 1/4 tsp. pepper
- shaved Parmesan cheese
In pot with tall sides, preferably a non-stick pot, combine pasta, chopped tomatoes, water, diced tomatoes with their juices, butter, garlic, basil, kosher salt and pepper.
Bring to a boil over medium-high heat.
Boil 10 minutes or until pasta is al dente and a brothy sauce has formed, stirring occasionally.
Serve with shaved Parmesan cheese.
Makes 4 servings, about 8 cups.
