Black Bean Burgers With Cilantro Lime Sauce
Ingredients
BLACK BEAN BURGERS
- 2 cans (15 ounces each) black beans , drained and rinsed
- 2 tsp. chili powder
- ½ tsp. ground cumin
- ½ tsp. garlic powder
- ½ tsp. kosher salt
- 1 egg
- 1 ¼ cups seasoned panko breadcrumbs
- 2 Tbs. olive oil
CILANTRO LIME SAUCE
- ½ cup mayonnaise
- 2 Tbs. chopped cilantro
- 2 Tbs. lime juice
- 1 small clove garlic , minced
- ¼ tsp. chili powder
SERVING SUGGESTIONS
- 4 Hamburger buns , pita bread or English muffins
- 4 Lettuce leaves
- 4 Tomato slices
Instructions
BLACK BEAN BURGERS:
- Process half of the black beans, 2 tsp. chili powder, cumin, garlic powder and kosher salt in food processor until blended.
- Transfer mixture to bowl and stir in egg, remaining black beans and panko breadcrumbs. Shape into 4 patties.
- Heat oil in large non-stick skillet over medium-high heat. Cook burgers until heated through, 7-8 minutes, turning once.
CILANTRO LIME SAUCE
- In small bowl combine mayonnaise, cilantro, lime juice, garlic and ¼ tsp. chili powder.
- Serve burgers with Cilantro Lime Aioli, on buns, pita bread or English muffins with lettuce and tomato, if desired.
