I love when I come home and dinner has cooked itself, don't you?
And the prep for this recipe is so simple. Just season chicken breasts with taco seasoning and cover with salsa. That's it!
Then the crockpot does the cooking for you.
Shred the chicken, fill the taco shells and top with your favorite taco toppings.
I used a mild salsa but you can use a medium salsa or if you like it spicy go with a hot salsa.
Sometimes I keep it real simple and just top the chicken filling with shredded cheese, cilantro and a squeeze of lime juice.
And when I want to get fancy, I load it up and add tomato relish and charred corn too.
Taco Tuesday is a favorite in my house and we all love the traditional ground beef taco filling but when you want to change things up, this chicken taco filling is the way to go!

- Step 1: Place chicken breasts in the bottom of your slow cooker and sprinkle with taco seasoning.
- Step 2: Pour the salsa over the chicken and cook on low for 8 hours or high for 4 hours.
- Step 3: Using forks, shred the chicken. Stir the chicken and any sauce or juices together and fill your tacos.
Hint: An easy way to shred the chicken is with two forks.
