Pesto Florentine Chicken
4 bone-in chicken breasts with skin on
1/4 cup Pesto Florentine OR storebought prepared pesto
1. Preheat oven to 425F. For easy clean up, line low-sided baking sheet with foil leaving 2-inch overhang.
2. Arrange chicken in prepared pan. Spread 1 tablespoonful of pesto under skin of each chicken piece.
3. Roast 40-45 minutes or until chicken juices run clear and meat thermometer reads 165F.
Makes 4 servings.
