- 4 cups fresh corn kernels ,from 4 large corn on the cob
- 1 cup crumbled cojita cheese
- 1/3 cup mayonnaise
- 1 jalapeno ,seeded and minced, about 2 Tbs.
- 1 scallion ,sliced, ¼ cup
- 1 Tbs. lime juice
- 1 Tbs. lime zest
- 1 tsp. chili powder
- 1 tsp. smoked paprika
- 2 Tbs. chopped cilantro

We love corn. Although this is a side dish but we often cook double. This recipe is not hard to cook but need to choose careful fresh corn kernels. Because fresh corn kernels gives us light sweet and soft.
