    Our Mexican Corn Salad Recipe combines fresh corn kernels, jalapeno, scallion and spice. Add fresh lime and cojito cheese and every spoonful is bursting with flavor.

    Street Corn Salad

    Elotes, the traditional Mexican street food, is corn on the cob that’s charred on the grill giving it a smoky flavor.

    I’ve turned this classic street food into a side dish salad, no grill necessary.

    Of course, if you want to grill the corn on the cob for an extra smoky flavor, go right ahead!

    By adding a simple spice, smoked paprika lends the smoky flavor to this recipe that grilling typically imparts.

    Rich mayonnaise balances the heat of the jalapeno and spice, lending a creaminess and bits of cojjito cheese add a milky flavor with a salty note.

    So grab a spoon and savor the complex flavors of our version of Mexican street corn salad.

    Mexican Street Corn Recipe

    Our Mexican Street Corn Salad Recipe combines fresh corn kernels, jalapeno, scallion and spice. Add fresh lime and cojito cheese and every spoonful is bursting with flavor.

    Ingredients

    • 4 cups fresh corn kernels ,from 4 large corn on the cob
    • 1 cup crumbled cojita cheese
    • 1/3 cup mayonnaise
    • 1 jalapeno ,seeded and minced, about 2 Tbs.
    • 1 scallion ,sliced, ¼ cup
    • 1 Tbs. lime juice
    • 1 Tbs. lime zest
    • 1 tsp. chili powder
    • 1 tsp. smoked paprika
    • 2 Tbs. chopped cilantro

    Instructions

    • Combine all ingredients in serving bowl, stirring until evenly coated.
    • Garnish with jalapeno slices and cilantro sprigs, if desired.

      We love corn. Although this is a side dish but we often cook double. This recipe is not hard to cook but need to choose careful fresh corn kernels. Because fresh corn kernels gives us light sweet and soft.

      A small amount of chili powder makes corn a little bit spicy and attractive. Corn is very popular and fast to cook. I usually prepare corn in fridge and ready to cook when friends come. So easy and tasty. Thank you so much!
