- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 3 Tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1 can (15 ounces) tomato sauce
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15.25 ounces) corn kernels , drained
- 1 can (15.5 ounces) kidney beans , drained
- ½ cup uncooked rice
- 1 cup water
- 1 cup shredded cheddar cheese
- 2 scallions , chopped
- Corn chips , for garnish

Instructions
- In large skillet with deep sides, cook ground beef, onion, green pepper, chili powder, cumin and kosher salt until beef is browned.
- Stir in tomato sauce, diced tomatoes, corn, beans, uncooked rice and water and bring to a boil.
- Reduce heat and simmer, uncovered, 25 minutes or until rice is tender, stirring occasionally.
- Top with shredded cheese, scallions and corn chips, if desired.
