How to make chicken meatballs
- Combine the ground chicken, egg, panko, scallions, 1 Tablespoon ginger and kosher salt and form into 16 meatballs.
- Brown meatballs in skillet with oil and reserve.
- Cook bell peppers, onion, garlic and remaining 1 Tablespoon fresh ginger until tender crisp.
- Stir in coconut milk and chicken broth and bring to a boil.
- Return meatballs to the skillet, reduce heat and simmer until cooked through.
- Stir in uncooked rice and pineapple. Remove from heat, cover, and let stand until rice is tender, 5 minutes.
Top with cilantro and enjoy!

- 1 pound ground chicken
- 1 egg
- ¾ cup plain panko breadcrumbs
- ¼ cup chopped scallions
- 2 Tablespoons minced fresh ginger , divided
- ½ teaspoon kosher salt
- 2 Tablespoons olive oil
- 2 red and/or orange bell peppers , seeded and thinly sliced, about 2 cups
- 1 onion sliced, 1 cup
- 2 cloves minced garlic
- 1 can (14 ounces) coconut milk
- 1 cup chicken broth
- 1 cup uncooked instant jasmine rice
- 1 can (8 ounces) crushed pineapple
- ¼ cup roughly chopped cilantro leaves

Instructions
- Combine ground chicken, egg, panko, scallions, 1 Tablespoon ginger and kosher salt. Shape into 16 meatballs. If chicken mixture is sticky just shape using wet hands.
- Heat oil in large deep sided skillet over medium-high heat.
- Brown meatballs, turning occasionally; reserve.
- In same skillet cook bell peppers, onion, garlic and remaining 1 Tablespoon fresh ginger until vegetables are tender crisp, about 5 minutes.
- Stir in coconut milk and chicken broth and bring to a boil.
- Add reserved meatballs and reduce heat and simmer until meatballs are cooked through, about 15 minutes.
- Stir in uncooked rice and pineapple. Remove from heat, cover, and let stand until rice is tender, 5 minutes.
- Top with cilantro.

Hi Patti, unfortunately, the cooking time and amount of liquid added into the skillet are all for instant rice. Using regular jasmine rice would call for different measurements and cook time. At this point I have not developed the rice using regular jasmine rice.
