    Chicken Meatballs Recipe

    Dinner will be on the table in less than an hour and with only one skillet to clean. Sign me up for this Chicken Meatballs Recipe With Jasmine Rice please!

    Ground chicken combines with panko breadcrumbs, scallions and ginger adding fresh flavors to these mini meatballs.

    Bell peppers and onions flavor this recipe along with a coconut sauce seasoned with fresh ginger and garlic. Pineapple bits create a flavorful jasmine rice along with the ground chicken meatballs.

    Round out this skillet dinner with a cucumber salad and you’ll be all set for dinner tonight.

    Top cooked chicken meatballs with cilantro
    Top with cilantro!
    1. Combine the ground chicken, egg, panko, scallions, 1 Tablespoon ginger and kosher salt and form into 16 meatballs.
    2. Brown meatballs in skillet with oil and reserve.
    3. Cook bell peppers, onion, garlic and remaining 1 Tablespoon fresh ginger until tender crisp.
    4. Stir in coconut milk and chicken broth and bring to a boil.
    5. Return meatballs to the skillet, reduce heat and simmer until cooked through.
    6. Stir in uncooked rice and pineapple. Remove from heat, cover, and let stand until rice is tender, 5 minutes.
    7. Top with cilantro.

    Ingredients you will need to make this recipe

    • ground chicken –  low fat ground meat
    • egg – a binder for the meatballs
    • plain panko breadcrumbs – gives texture to the meatballs
    • scallions – mild onion flavor
    • fresh ginger – a hint of sweetness and pepper notes
    • kosher salt – brings out all the flavors
    • olive oil – helps to brown the chicken meatballs
    • red and/or orange bell peppers – add color and crunch
    • onion – for savory notes
    • garlic – adds depth of flavor
    • coconut milk – the base for the sauce
    • chicken broth – adds chicken notes to the sauce
    • uncooked instant jasmine rice – fragrant and fluffy
    • crushed pineapple  - adds a hint of sweet flavor
    • cilantro - for fresh herb flavor

    Ingredients

    • 1 pound ground chicken
    • 1 egg
    • ¾ cup plain panko breadcrumbs
    • ¼ cup chopped scallions
    • 2 Tbs. minced fresh ginger , divided
    • ½ tsp. kosher salt
    • 2 Tbs. olive oil
    • 2 red and/or orange bell peppers , seeded and thinly sliced, about 2 cups
    • 1 onion sliced, 1 cup
    • 2 cloves minced garlic
    • 1 can (14 ounces) coconut milk
    • 1 cup chicken broth
    • 1 cup uncooked instant jasmine rice
    • 1 can (8 ounces) crushed pineapple
    • ¼ cup roughly chopped cilantro leaves

    Instructions

    • Combine ground chicken, egg, panko, scallions, 1 Tablespoon ginger and kosher salt. Shape into 16 meatballs. If chicken mixture is sticky just shape using wet hands.
    • Heat oil in large deep sided skillet over medium-high heat.
    • Brown meatballs, turning occasionally; reserve.
    • In same skillet cook bell peppers, onion, garlic and remaining 1 Tablespoon fresh ginger until vegetables are tender crisp, about 5 minutes.
    • Stir in coconut milk and chicken broth and bring to a boil.
    • Add reserved meatballs and reduce heat and simmer until meatballs are cooked through, about 15 minutes.
    • Stir in uncooked rice and pineapple. Remove from heat, cover, and let stand until rice is tender, 5 minutes.
    • Top with cilantro.

      This recipe is amazing and loaded with such delicious flavors, but I don't like to buy instant rice (it's more expensive). Do you have any suggestions for modifying this recipe to make it with regular jasmine rice?

      Hi Patti, unfortunately, the cooking time and amount of liquid added into the skillet are all for instant rice. Using regular jasmine rice would call for different measurements and cook time. At this point I have not developed the rice using regular jasmine rice.
