- 2 Tbs. chopped parsley

- ½ teaspoon garlic powder

- 4 (4 ounces each) cod fillets

- Preheat oven to 425F. Line a baking sheet with shallow sides with parchment paper.
- In a bowl combine panko, butter, parsley, zest, garlic powder, kosher salt and pepper.
- Arrange fillets on prepared baking sheet and brush tops with Dijon.
- Top with breadcrumb mixture, pressing gently to adhere.

Jane, you can spread some mayonnaise over the cod. If that doesn't work for you then just brush the fish with some olive oil. You need something that will help the breadcrumbs to adhere to the fish. Hope this helps! Happy Cooking, GG

I am not a Dijon or spicy mustard fan so I mixed some with mayonnaise, and I used what was in my pantry:dried parsley, garlic pepper , salt and butter, and dried lemon zest. I’m sure not as good as yours but it was very good.
