    Spring has arrived when Lemon Roasted Asparagus is on your menu! I’m always happy when I see bunches and bunches of gorgeous asparagus in the produce department.

    Yes, I will not deny it, I am a true foodie and get excited about beautiful food! And I’m excited about this super easy asparagus recipe that you’ll be proud to serve on your springtime holiday dinner table.

    I’ve even come up with a delicious variation of this easy asparagus recipe that’s topped with a buttery panko crumb. Both recipes are easy to make, fabulously delicious and will look beautiful on your table!

    Our asparagus recipe will taste amazing with an oven baked cod recipe or an easy chicken recipe.

    What are benefits of asparagus?

    Asparagus is a vegetable filled with nutrition benefits. Asparagus are low in fat and also provide:

    • Fiber
    • Folic acid
    • Potassium
    • Thiamin
    • Vitamin A
    • Vitamin B6
    • Vitamin C

    How to select asparagus?

    When buying fresh asparagus, you want stalks that are firm, can stand up straight and have a smooth texture. Stay away from stalks that are wilted or soft.

    The tips of asparagus should be compact and closed and firm.

    How to store asparagus?

    Trim ends of asparagus stalks, wrap the ends in a wet paper towel and place asparagus in a plastic food storage bag. Store them in your refrigerator’s vegetable drawer.

    How long will asparagus stay fresh in the refrigerator?

    Asparagus will stay fresh in the refrigerator, when prepared as described above, for 3-4 days.

    • You may need to adjust the roasting time depending on the thickness of your asparagus
    • Change up the citrus flavor and make this recipe with orange slices
    • Add finely chopped shallots

    Top this recipe with a Lemon Parsley Panko Topping for another delicious asparagus recipe!

    Follow the original recipe and while asparagus are roasting:

    • In small nonstick skillet melt 1 Tbs. butter over medium-high heat. 
    • Stir in 1/4 cup seasoned Panko breadcrumbs; cook until lightly toasted and golden.
    • Remove from heat and stir in 1 Tbs. chopped parsley and 1 Tbs. lemon zest.
    • Sprinkle over roasted asparagus and serve.

    Lemon Roasted Asparagus

    Ingredients

    • 1 lemon ,thinly sliced, then quartered
    • 2 lbs. asparagus , trimmed
    • 2 Tbs. olive oil
    • 1/2 tsp. garlic powder
    • 1/2 tsp. kosher salt
    • 1/4 tsp. pepper

    Instructions

    • Preheat oven to 425F. Line large shallow baking pan with foil or parchmen paper.
    • Arrange lemon quarters in single layer on prepared pan.
    • Arrange asparagus evenly over lemon slices.
    • Drizzle with olive oil; sprinkle with garlic powder, kosher salt and pepper.
    • Roast until asparagus are tender, about 20 minutes.
