Ever wish for a spaghetti and meatballs dinner on a busy weeknight but didn’t want to go through all the hassle of making and frying up the meatballs, boiling water and then cooking the pasta, heating up oil and spices and then adding tomato sauce for a homemade pasta sauce? Me too!
Sounds like way too much work for a busy weeknight after a long day at work and dealing with kids, homework and busy after school schedules. Enter in my one pot supper recipe!
Dinner is easy when everything cooks together quickly in just one pot. These are my favorite type of recipes and they have been since my four boys were little. Back then life was crazy busy and everyone was crazy hungry. Sound familiar?
But I’m not one for jarred pasta sauces that usually have lots of sugar in them. Or for frozen meatballs, when it’s so easy to make your own homemade meatballs.
So here you go, here’s a recipe with spaghetti sauce that’s from scratch for a quick and easy spaghetti and meatballs recipe that you’re going to want to make over and over again on those oh-so-crazy busy evenings.

Ingredients you will need to make this recipe

- crushed tomatoes
- diced tomatoes with basil, garlic and oregano
- water
- spaghetti
Oh and I must tell you that I had the best sous chef helping me with this recipe! My sweet granddaughter Brenda was my assistant in the kitchen making this recipe and also was “on set” painting on sauce when the meatballs got dry during our photo shoot. She actually thought it was quite funny that I asked her to “paint” on the tomato sauce! But she did an excellent job, don’t you agree?
But her favorite part of being my assistant was taste testing the recipe! She approved….after her third bowlful! I’d say this recipe is a success!

- 1 lb. ground beef
- 1 egg
- ½ cup seasoned breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ tsp. dried basil
- ½ tsp. garlic powder
- ¼ tsp. kosher salt
- 1 can (28 ounces) crushed tomatoes
- 1 can (14.5 ounces) diced tomatoes with basil garlic and oregano
- 2 ¼ cups water
- 1 tsp. dried basil
- ½ tsp. garlic powder
- ½ tsp. kosher salt
- 8 ounces uncooked spaghetti , broken in half

Meatballs:

Combine ground beef, egg, breadcrumbs, Parmesan, ½ tsp. dried basil. ½ tsp. garlic powder and ¼ tsp. kosher salt until blended.

Shape into 24 mini meatballs.

Spaghetti and Sauce:

In skillet with deep sides, bring crushed tomatoes, diced tomatoes with their juices, water, ½ tsp. dried basil, ½ tsp. garlic powder and ½ tsp. kosher salt to a boil over medium-high heat.

Carefully add mini meatballs to the boiling sauce and cook 10 minutes. Meatballs should be submerged in the sauce. If not, stir occasionally.

Add spaghetti and boil an additional 10 minutes or until meatballs are cooked through and spaghetti is al dente.

Serve with additional grated Parmesan, if desired.
