Enter French Onion Chicken, the latest recipe craze trending on the internet that combines tender chicken and all the flavors of onion soup, even the cheese, in one recipe.

French Onion Chicken with melted cheese

Made in one skillet on your stove top, buttery caramelized onions simmer with lightly seasoned chicken tenders in a flavorful pan sauce. Smothered in cheese that melts over the top, trust me when I say that every forkful is truly irresistible.

Caramelized onions are onions that have been cooked for an extended length of time with a fat, either oil, butter or both. Caramelizing onions brings out their sweetness.

What is the difference between caramelized onions and sautéed onions?

Caramelized onions will be darker in color than sautéed onions. Sauteed onions cook at a higher temperature for less time. Caramelized onions cook at a low temperature for as long as 30 minutes and up to one hour. Caramelized onions are a deep rich dark golden color.

What does a caramelized onion taste like?

A caramelized onion has a sweet flavor with slight savory onion notes.

Ingredients
  • 2 Tbs. olive oil , divided
  • 1 ¼ lbs. boneless chicken tenders
  • 1 tsp. dried thyme , divided
  • ½ tsp. kosher salt
  • ¼ tsp. pepper
  • 2 Tbs. butter
  • 2 sweet onions , such as Vidalia, sliced, 4 cups
  • ¼ cup sherry or beef broth
  • 1 ¼ cups beef broth
  • 1 Tbs. flour
  • 1 cup shredded Gruyere cheese or Swiss cheese
Instructions
  1. Heat 1 Tablespoon oil in large non-stick skillet over medium-high heat.
  2. Season chicken with ½ tsp. thyme, kosher salt and pepper and cook until browned, turning once, and set aside.

  3. In same skillet melt butter and add remaining 1 Tablespoon oil.

  4. Cook onions over low heat until golden and softened, stirring occasionally, about 25 minutes.
  5. Add sherry and cook 1 minute.
  6. Combine broth, flour and remaining ½ tsp. thyme until blended and stir into onions.

  7. Return chicken to skillet and bring to a boil.
  8. Reduce heat and simmer, uncovered, until chicken is cooked through and a sauce has formed.
  9. Top with shredded cheese. Reduce heat to low and cook, covered, until cheese is melted, about 2 minutes.
