How to make berry pies

- Mash 1 cup strawberries. Quarter the remaining strawberries and set aside.
- Combine the mashed strawberries, sugar, water and cornstarch in a saucepot and bring to a boil over medium-high heat.
- Reduce heat and simmer until thickened.
- Remove from the heat and stir in zest and reserved quartered strawberries.
- Spoon strawberry mixture into 12 mini graham cracker crusts.
- Refrigerate until set, about 2 hours.
- Pipe whipped topping around edges and top with blueberries.

To store your mini jello pies, cover loosely with plastic wrap and refrigerate until ready to serve.
