    Festive and patriotic, No Bake Mini Fruit Tarts are bursting with a citrus kissed strawberry filling and crowned with fresh blueberries. A red white and blue dessert that's a perfect addition on your July 4th menu.

    No-Bake Mini Fruit Tarts will be the perfect ending to your holiday celebration! 

    A simple-to-make strawberry filling kissed with a hint of citrus and crowned with fresh blueberries will surely look festive and patriotic on your table.

    Brimming with red, white and blue color, our no bake mini fruit tarts are a snap to make.

    Fresh strawberries, orange zest and sugar combine with water and cornstarch to make a simple no bake pie filling.

    Just like a jello pie, but you control the amount of sugar. I like that! Sweet berry pies that are only as sweet as you want them to be.

    And how much better can this dessert get? Did someone say store bought crusts?

    An easy fruit pie with a premade crust that's filled with juicy fresh berries of the season!

    Now that’s much better than making your own pie crust, agree? Because when it’s hot outside, it’s time to make no bake desserts!

    Prefer a bigger no-bake pie? Our strawberry filling will also fit into 1 (6 ounce) full size graham cracker crust!

    Change the zest to lemon or lime for a different hint of citrus. 

    Even better, make it a triple berry pie and add raspberries too!

    If you prefer mixed berries in the filling just combine the two fruits together in the filling and you'll have yourself a strawberry blueberry pie.

    Bursting with the fresh flavors of a strawberry filling with a hint of orange, mixed berry pies is a quick and easy mini fruit tart recipe you’ll definitely want on your menu.

    How to make berry pies

    Scroll down for the full recipe instructions and ingredient amounts in the recipe card below

    1. Mash 1 cup strawberries. Quarter the remaining strawberries and set aside.
    2. Combine the mashed strawberries, sugar, water and cornstarch in a saucepot and bring to a boil over medium-high heat.
    3. Reduce heat and simmer until thickened.
    4. Remove from the heat and stir in zest and reserved quartered strawberries.
    5. Spoon strawberry mixture into 12 mini graham cracker crusts.
    6. Refrigerate until set, about 2 hours.
    7. Pipe whipped topping around edges and top with blueberries.

    How to store jello pie

    To store your mini jello pies, cover loosely with plastic wrap and refrigerate until ready to serve.

    Ingredients

    • 1 lb. strawberries, hulled
    • 3/4 cup sugar
    • 3/4 cup water
    • 3 Tbs. cornstarch
    • 1 tsp. orange zest
    • 2 pkgs. (4 ounces each) 6 mini graham cracker crusts
    • 2 cups whipped topping
    • 2 cups blueberries

    Instructions

    • Mash 1 cup strawberries. Quarter remaining strawberries and set aside.
    • In medium saucepot combine mashed strawberries, sugar, water and cornstarch and bring to a boil over medium-high heat, stirring frequently.
    • Reduce heat to medium-low and simmer until thickened, stirring occasionally.
    • Remove from heat and stir in zest and reserved quartered strawberries.
    • Spoon strawberry mixture into 12 mini graham cracker crusts.
    • Refrigerate until set, at least 2 hours.
    • Pipe whipped topping around edges and top with blueberries.

      We all loved this! It was super easy to make and the perfect summer dessert at our recent backyard barbecue. I can't wait to make it again and to try it out with different berries.
