Chocolate Chunk Pumpkin Spice Bread is an easy recipe for a flavorful quick bread. Pumpkin spice and pumpkin puree combine to give a moist cake-like bread bursting with the warm seasonal flavor of pumpkin spice and studded with chunks of chocolate.
Preheat oven to 350F. Spray a 9-inch x 5-inch loaf pan with non-stick cooking spray.
In bowl combine butter, granulated sugar, brown sugar, eggs and vanilla, stirring until smooth and blended.
Stir in flour, pumpkin pie spice, baking powder, baking soda and salt until a batter forms.
Add pumpkin puree and stir until combined.
Stir in chocolate chunks.
Transfer batter to prepared loaf pan and bake 1 hour. Tent with foil and bake an additional 10 minutes or until toothpick inserted in center comes out clean.
Cool 20 minutes in pan on wire rack. Remove from pan and cool completely on wire rack.
Makes 12 servings.
