How to make pumpkin muffins

- Preheat oven to 375F. Line a 12-cup muffin tin with cupcake liners
- Combine melted butter, granulated sugar and brown sugar until blended.
- Stir in eggs, one at a time and then pumpkin puree.
- Add flour, pumpkin pie spice, baking powder, baking soda and salt and stir until a smooth batter forms.
- Divide batter evenly between cupcake liners, preferably using a scooper.
- Bake 25 minutes or until toothpick inserted in centers comes out clean.
- Cool 10 minutes in the pan on wire rack. Remove from the pan and cool completely on wire rack.
- Meanwhile, in a small bowl combine confectioners’ sugar and water until smooth.
- Spread glaze over the tops of muffins.
Recipe Tips
- Be sure to use 100% pure pumpkin puree and not pumpkin pie filling
- Stir in mini chocolate chips for chocolate chip pumpkin muffins
- Frost these muffins with chocolate frosting
- These muffins are delicious with or without the glaze!
Substitutions
- You can frost your muffins with vanilla frosting or pumpkin spice frosting instead of the vanilla glaze
- Dark brown sugar and light brown sugar will both work well int his recipe
