How to make homemade pumpkin pancakes

- In a medium bowl, combine flour, coconut sugar, pumpkin pie spice, kosher salt and baking powder.
- Combine the egg and pumpkin puree until blended
- Add the puree mixture into the dry ingredients.
- Add seltzer and stir until the pumpkin mixture is just blended.
- Coat a large non-stick skillet or griddle with cooking spray and heat over medium-high heat.
- Cook the pancakes on a hot griddle or large skillet, turning once, until golden brown and cooked through.
- Serve with butter and pumpkin spice syrup or maple syrup, of course! Add walnuts, if desired.

- You can easily make these pancakes ahead, refrigerate and then reheat in a 200F oven or in the microwave
- I like to arrange pancakes in a single layer on a baking sheet when reheating them in the oven
- When reheating pancakes in the microwave be sure to use a microwave-safe plate
- To make pumpkin banana pancakes just stir mashed bananas into the batter and cook
- Love nuts? Stir walnuts into your maple syrup!
