- You don't have to grate your own cauliflower rice. Packages of cauliflower rice are available in both the produce section and frozen aisle of your grocery store.
- Seasoned panko breadcrumbs not only add texture but they add seasoning flavor too. Be sure to use flavored breadcrumbs for that additional flavor.

Substitutions
- Mozzarella Cheese - You can replace the shredded mozzarella with shredded Italian blend cheese
- Cheddar Cheese - Shredded taco cheese or shredded mexican cheese can replace cheddar cheese
- Scallion - Finely minced red onion or sweet onion can be substituted for scallion

Three Cheese Cauliflower Rice Patties Recipe

Ingredients
- 2 cups packed cauliflower rice or 1 10 ounce pkg. cauliflower rice
- 1 large egg
- 2/3 cup seasoned panko breadcrumbs
- 1/4 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 2 Tablespoons grated Parmesan cheese
- 1/4 cup shredded carrots
- 2 Tablespoons chopped scallions optional
- 1/8 teaspoon pepper

Instructions
- Place cauliflower rice in microwave-safe bowl and cover with plastic wrap. Microwave 3 minutes or until tender. Cool. Squeeze dry.
- Preheat oven to 400F. Spray baking sheet with non-stick cooking spray.
- Combine cauliflower rice, egg, breadcrumbs, carrot, mozzarella, cheddar, Parmesan, scallions and pepper.
- Shape into 12 (2-inch diameter)patties, about 2 Tablespoonful each.
- Arrange on prepared baking sheet and spray tops of patties with non-stick cooking spray.
- Bake 25 minutes or until golden, turning once halfway through baking time.
