    Here are some ingredients you can substitute in this recipe.

    For bone-in chicken thighs, you can substitute the following:

    • bone-in chicken breasts
    • boneless chicken thighs
    • boneless chicken breasts

    Just be sure to adjust your cooking time, if necessary, so that your chicken is cooked through and registers on a meat thermometer at 165 degrees.

    For shredded Parmesan cheese, you can substitute the following:

    • grated Parmesan cheese
    • shredded mozzarella cheese
    • your favorite grated cheese
    • your favorite shredded cheese

    For plum tomatoes, you can substitute:

    • canned tomatoes, drained
    • cherry tomatoes

    Ingredients

    • 6 bone-in chicken thighs , about 3 lbs., skin removed
    • 1 tsp. dried Italian seasoning , divided
    • 1 tsp. kosher salt , divided
    • 1/2 tsp. garlic powder
    • 3 plum tomatoes , chopped, 1 1/2 cups
    • 1 cup panko breadcrumbs
    • 1/2 cup shredded Parmesan cheese
    • 4 Tbs. olive oil , divided

    Instructions

    • Preheat oven to 425F.
    • Arrange chicken thighs in roasting pan or baking dish. Sprinkle with 1/2 tsp. Italian seasoning, 1/2 tsp. kosher salt and garlic powder.
    • Combine tomatoes, panko, Parmesan, 3 Tbs. olive oil and remaining 1/2 tsp. Italian seasoning and remaining 1/2 tsp. kosher salt. Spoon tomato mixture over chicken. Drizzle with remaining 1 Tbs. olive oil.
    • Bake 45 minutes or until topping is golden and chicken is cooked through and meat thermometer registers 165F.
