The dog days of summer have officially arrived and boy is it ever hot and humid here in Jersey! I certainly don’t want to turn on the stovetop, the oven or even the grill today. So I’ll be making a chicken salad that I can put together with just a few ingredients from my fridge and pantry…..no stove or grill necessary, thank you. I’ll season the creamy mayonnaise base with coconut oil, curry powder and fresh lime juice for a fabulous flavor combination. Toss in cooked chicken as the protein, chopped apple and sliced almonds for a bit of crunch, raisins for bursts of sweetness, and red onion for just the right amount of savory. Wrap it all up in tender lettuce leaves (I prefer Boston lettuce) and the flavors and textures will blow you away! Now that’s a great way to keep your cool at dinner tonight!
