Curried Chicken Salad Lettuce Wraps is a no cook recipe that’s ideal for a summertime dinner. Chicken combines with chopped apple and sliced almonds for a bit of crunch, raisins for bursts of sweetness, and red onion for just the right amount of savory. Tossed in a creamy mayonnaise flavored with curry powder and fresh lime, our chicken salad is wrapped up in tender lettuce leaves.

Curry Chicken Salad Recipe

The dog days of summer have officially arrived and boy is it ever hot and humid here in Jersey!

I certainly don’t want to turn on the stovetop, the oven or even the grill today. So I’ll be making a chicken salad that I can put together with just a few ingredients from my fridge and pantry. No stove or grill necessary, thank you.

I’ll season the creamy mayonnaise base with coconut oil, curry powder and fresh lime juice for a fabulous flavor combination.

Then I’ll toss in cooked chicken as the protein, chopped apple and sliced almonds for a bit of crunch, raisins for bursts of sweetness, and red onion for just the right amount of savory.

Wrap that deliciousness all up in tender lettuce leaves (I prefer Boston lettuce) and the flavors and textures will blow you away!

Now that’s a great way to keep your cool at dinner tonight!

So go ahead and make a delicious and refreshing chicken salad recipe tonight.

Ingredients
  • 1/2 cup mayonnaise
  • 3 Tbs. coconut oil , at room temperature
  • 1 Tbs. curry powder
  • 1 Tbs. lime juice
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • 3 cups cut-up cooked chicken
  • 1 apple , seeded and chopped, 1 1/2 cups
  • 2/3 cup golden raisins or dried cranberries
  • 1/2 cup sliced almonds toasted
  • 2 Tbs. finely chopped red onion
  • 12 lettuce leaves
Instructions
  1. In bowl combine mayonnaise, coconut oil, lime juice, curry powder, kosher salt and pepper until blended.
  2. Stir in chicken, apple, raisins, almonds, and red onion until evenly coated.
  3. Divide chicken salad evenly between lettuce leaves.
