Sometimes those warm summer evenings are just too hot to cook and that’s when a chicken salad is my go-to dinner. The best part of a summer chicken salad is adding in those summertime flavors that elevate it from ordinary to extraordinary.
Fragrant basil and sweet blueberries add a unique flavor combination to our easy chicken salad recipe. Greek yogurt gives it a healthy spin and toasted almonds add an unexpected crunch.

Blueberry Basil Chicken Salad Lettuce Wraps

Ingredients
- ½ cup plain Greek yogurt
- ¼ cup chopped fresh basil
- 1/2 tsp. kosher salt
- ¼ tsp. pepper
- 3 cups chopped cooked chicken
- 1 cup blueberries
- ½ cup chopped celery
- ¼ cup chopped scallions
- 8 lettuce leaves
- 2 Tbs. toasted sliced almonds

Instructions
- Combine yogurt, basil, salt and pepper in bowl until blended.
- Add chicken, blueberries, celery and scallions and toss until evenly coated.
- Arrange lettuce leaves on serving platter and top with chicken mixture, dividing evenly between lettuce leaves.
- Sprinkle with almonds.
