I'm all in favor of a "simple to put together and just pop in the oven" recipe! So here's another super easy and fabulously delicious baked chicken recipe that you are sure to fall in love with! The flavors of Italy are baked to perfection and crowned with cheese and fresh basil! A new family favorite....for sure!
Baked Bruschetta Chicken
1 1/2 lbs. boneless skinless chicken breasts
1 tsp. Perfect Pinch Tuscan Rosemary & Sundried Tomato seasoning, McCormick*
1 1/4 cups store bought bruschetta, Sabra
1 1/2 cups shredded mozzarella cheese
1 Tbs. sliced fresh basil
1. Preheat oven to 375F. Coat 2 quart baking dish with non-stick cooking spray.
2. Season chicken with Tuscan seasoning. Arrange in prepared baking dish. Top with bruschetta. Bake 25 minutes.
3. Top with shredded cheese. Bake until chicken is cooked through and cheese is melted, 5-10 minutes. Meat thermometer should read 165F.
4. Sprinkle with sliced basil. Serve with hot cooked pasta, if desired.
Makes 6 servings.
*Can't find McCormick's Perfect Pinch? Not a problem! Just substitute Mrs. Dash Tomato Basil Garlic Seasoning Blend!
Your chicken looks wonderful, I love a baked chicken with cheese and sauce, but a nice bruschetta, now that is going to really taste nice.
