How to make baked bruschetta chicken recipe

- Preheat oven to 375F. Coat a 2 quart casserole dish with non-stick cooking spray.
- Season the chicken with Italian seasoning and arrange the chicken in the prepared baking dish.
- In a bowl mix tomatoes, onion, garlic, kosher salt and pepper. Add the olive oil and balsamic vinegar and toss until evenly coated.
- Spoon the bruschetta mixture over the chicken and bake 25 minutes.
- Top with shredded cheese. Bake until the chicken is cooked through and the cheese is melted, 5-10 minutes. A meat thermometer should read an internal temperature of 165F.
- Sprinkle with sliced basil. Serve with hot pasta, if desired.
