Meatloaf is definitely near the top of my list of comfort foods. Make it an Italian Meatloaf Parmesan and my knees get weak!
This turkey meatloaf is an Italian twist on the classic meatloaf and every forkful is bursting with bright flavors.
And there are two types of tomatoes in this meatloaf, sundried tomatoes and oven roasted grape tomatoes.
It's been snowing outside, again, and according to the weatherman, the freezing rain is quickly approaching followed by even more snow.
I'm thinking it's time to heat up the oven and cook us some meatloaf!
But not just any meatloaf. I'm cooking up a ground turkey meatloaf seasoned with the flavors of Tuscany. Oh yes I am!
It doesn’t get much better than a Tuscan turkey meatloaf folks!
Ground turkey is flavored with pesto, sundried tomatoes, Parmesan, garlic and Italian seasoning.
And this isn’t just a meatloaf with cheese, this is a meatloaf with two cheeses! Say what?
Parmesan cheese inside and mozzarella cheese melted on top of the meatloaf too. Holy moly!
As it roasts in the oven, this meatloaf is surrounded by tomatoes and shallots bathed in olive oil and seasonings. Now that’s what I call a Tuscan turkey meatloaf with oven-roasted tomatoes!
Steeped in Italian flavor with an impressive presentation, your family will not believe that this is an easy meatloaf recipe when you set it on the table!

How to make Italian meatloaf

- Preheat the oven to 375F.
- In a large bowl combine ground turkey, egg, Panko breadcrumbs, Parmesan, sundried tomatoes, pesto, garlic, 3/4 tsp. Italian seasoning, 3/4 tsp. kosher salt and 1/4 tsp. pepper.
- Shape the mixture into a loaf and arrange it on a baking pan with low sides.
- In another bowl combine tomatoes, shallots and remaining 1/4 tsp. Italian seasoning, 1/4 tsp. kosher salt and 1/4 tsp. pepper. Arrange the tomato mixture around the meatloaf.
- Roast for 45 minutes.
- Top with shredded mozzarella and roast an additional 10 minutes or until cheese is melted and turkey is cooked through.

- Either homemade pesto or store bought pesto will both work well in this recipe
