It's been snowing outside.....again.... and, according to the weatherman, the freezing rain is quickly approaching followed by even more snow. I'm thinking it's time to heat up the oven and cook us some meatloaf! Not just any meatloaf. I'm cooking up a healthy turkey meatloaf seasoned with the flavors of Tuscany....pesto, sundried tomatoes, garlic, Italian seasoning....and surrounded by tomatoes and shallots bathed in olive oil and seasonings. My mouth is watering already! Ok meatloaf, take me back to the warm sunny days of Tuscany, I'm so ready!
