Gingered Cinnamon Honey Glazed Carrots
1 lb. baby carrots
2/3 cup water
1/3 cup honey
2 Tbs. butter
2 tsp. minced crystallized ginger
1/2 tsp. ground cinnamon
1/2 tsp. kosher salt
1/4 tsp. pepper
1. In large non-stick skillet combine carrots, water, honey, butter, ginger, cinnamon, kosher salt and pepper. Bring to a boil over medium-high heat.
2. Reduce heat to medium and simmer 25 minutes or until carrots are tender and liquid has reduced to form a glaze.
Makes 4 servings.
