Ingredients
- 1 lb. baby carrots
- 2/3 cup water
- 1/3 cup honey
- 2 Tbs. butter
- 2 tsp. minced crystallized ginger
- 1/2 tsp. ground cinnamon
- 1/2 tsp. kosher salt
- 1/4 tsp. pepper

Instructions
- In large non-stick skillet combine carrots, water, honey, butter, ginger, cinnamon, kosher salt and pepper. Bring to a boil over medium-high heat.
- Reduce heat to medium and simmer 25 minutes or until carrots are tender and liquid has reduced to form a glaze.
I made this for eight people and it was a hit with everyone. Two people were not cinnamon lovers but said it was great. All took the recipe home.
For me I would cut the cinnamon in half but was delicious as listed too.
