    This easy recipe is ideal for a weeknight dinner vegetable side dish and fancy enough for entertaining too. With Thanksgiving right around the corner, this glazed carrots recipe will be a delicious addition to you holiday menu.

    And this carrot recipe makes four servings but can easily be doubled to serve more. It may just take a few more minutes for the carrots to be tender and for the glaze to form but will be well worth the wait.

    Ingredients

    • 1 lb. baby carrots
    • 2/3 cup water
    • 1/3 cup honey
    • 2 Tbs. butter
    • 2 tsp. minced crystallized ginger
    • 1/2 tsp. ground cinnamon
    • 1/2 tsp. kosher salt
    • 1/4 tsp. pepper

    Instructions

    • In large non-stick skillet combine carrots, water, honey, butter, ginger, cinnamon, kosher salt and pepper. Bring to a boil over medium-high heat.
    • Reduce heat to medium and simmer 25 minutes or until carrots are tender and liquid has reduced to form a glaze.

      I made this for eight people and it was a hit with everyone. Two people were not cinnamon lovers but said it was great. All took the recipe home.
      For me I would cut the cinnamon in half but was delicious as listed too.
