- Step 1: In a large nonstick skillet over medium-high heat, cook the ground beef, onion and garlic on the stovetop until the beef is browned and the onion is softened.
- Step 2: Drain any excess fat and transfer the ground meat mixture to your slow cooker.
- Step 3: Add the beef broth, marinara sauce, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Step 4: Stir in the lasagna noodles for the last 30 minutes of the cooking time. Cover and cook until the noodles are tender.
- Step 4: Add the heavy cream and stir until blended.
Hint: This is a thick and hearty soup. If you prefer a less thick soup just add one additional cup of beef broth.
Another hint: If you refrigerate any leftovers, the noodles will absorb a lot of the liquid so you will definitely need to add more broth, cream or milk when reheating your soup!
