Do you take the rind off Brie before baking?
It is best to remove the top rind of brie before baking.
Using a sharp knife cut horizontally across the top of the cheese, slicing off about 1/8-inch.
Be sure to keep the sides and bottom rind on the cheese so it holds it’s shape when baking.
However, the rind is edible so you don’t have to cut off the top rind if you choose not to.
Is Brie a healthy cheese?
Brie is lower in fat than most other cheeses and also is low in carbohydrates. This makes Brie a good choice when looking for a healthier cheese.
What jam goes with Brie?
Almost any sweet or savory jam will complement the mild flavor of Brie cheese.
How to make baked brie with jam

- Preheat oven to 400F. Line baking sheet with parchment paper or coat with cooking spray.
- In a microwave safe bowl combine cranberries and Brandy. Microwave 1-2 minutes or until hot. Stir in jelly, rosemary and Dijon. Let stand.
- Meanwhile, reserve 1 Tbs. melted butter. Place one phyllo sheet on prepared baking sheet; brush with melted butter to coat; top with one phyllo sheet. Repeat with remaining butter and phyllo sheets.
- Trim and discard rind from top of Brie. Place Brie, trimmed side up, in center of layered phyllo sheets. Spread cranberry mixture over top of Brie.
- Bring corners of dough up over Brie leaving center uncovered. Brush with the reserved 1 Tablespoon butter.
- Bake until pastry is golden. Let stand 30 minutes-1 hour.
- Transfer to a serving plate. Garnish with fresh rosemary sprigs and serve with apple slices, grapes and crackers.

how do you take the top coating off the brie for the philo wrapped brandied cranberry brie? I always gouge large pieces off & know there has to be an improved way. help, please & thanks for any suggestions

This looks delicious and so pretty! I was wondering what you do with the 1 tablespoon of butter, that you say to reserve in step 3. I am assuming you'd brush it on the outside of the Philo dough after you wrap the brie before you bake it? But I wanted to know for sure.
