Panko Crusted Beef Rib Roast
1 (5-6 bs.) bone-in center cut beef rib roast
1/4 cup horseradish mustard
1/2 cup seasoned panko breadcrumbs
2 Tbs. chopped parsley
2 Tbs. olive oil
1 tsp. Montreal steak seasoning
1. Preheat oven to 350F.
2. Place rib roast in roasting pan. Spread mustard evenly over top of roast.
3. In bowl combine panko, parsley, olive oil and steak seasoning. Press crumb mixture on top of roast. Mustard will act as the “glue” to hold the crumbs on.
4. Roast 15-20 minutes per pound or until meat thermometer reads 145F for medium rare.
5. Let roast rest 10 minutes before carving.
Makes about 8 servings.
