Roasted Cinnamon Apples ‘n Chicken
Ingredients
- 3 Gala and/or Granny Smith apples , cored, each cut into 8 wedges
- 1 large onion , sliced 1/2″ thick, 1 1/2 cups
- 1 head garlic , peeled
- 2 Tbs. butter , melted
- 3/4 tsp. ground cinnamon , divided
- 3/4 tsp. dried marjoram , divided
- 3/4 tsp. kosher salt , divided
- 1/4 tsp. cracked black pepper
- 1 (6-7 lbs.) whole roaster chicken
- 1/4 tsp. garlic powder
Instructions
- Preheat oven to 350F.
- In bowl combine apples, onion, garlic cloves, butter, 1/4 tsp. cinnamon, 1/4 tsp. marjoram, 1/4 tsp. kosher salt and cracked black pepper; reserve.
- Season chicken with remaining 1/2 tsp. cinnamon, 1/2 tsp. marjoram, 1/2 tsp. kosher salt and garlic powder.
- Roast 15-20 minutes per pound or until chicken juices run clear and thermometer reads 180F, arranging reserved apple mixture in roasting pan around chicken and roasting during last 45 minutes of cooking time for chicken.
