How to make a Mexican Chicken Casserole

- Preheat oven to 375F.
- Coat a 2-quart baking dish with non-stick cooking spray.
- Season both sides of the chicken with taco seasoning mix. Arrange in prepared baking dish. Top with salsa.
- Bake for 25 minutes.
- Top with shredded cheese. Bake until chicken is cooked through and cheese is melted, about 5 minutes. A meat thermometer should read 165F.
- Sprinkle with chopped cilantro.

I've made this a number of times and it is great topped with sour cream and chopped green onions. Do you think it would work well with boneless pork loin chops?
