- You can add frozen peas and carrots in place of the frozen peas

Fiesta Saffron Rice

Ingredients
- 3 Tbs. olive oil
- 1 onion, chopped, 1 cup
- 1 red bell pepper, chopped, 1 cup
- 2 1/2 cups water
- 1 pkg. (10 oz.) saffron yellow rice, such as Goya
- 1 cup frozen peas

Instructions
- In pot heat oil over medium heat. Cook onion and red bell pepper until tender-crisp, 3-4 minutes.
- Add water. Bring to a boil. Stir in rice mix, stirring until blended.
- Reduce heat to medium-low and simmer, covered, 20 minutes.
- Stir in peas. Cover and cook additional 5 minutes or until rice is tender and liquid has been absorbed.

This looks amazing and I want to try it, but I have a question. All I can find is Goya Spanish style yellow rice in a 7 oz box. Is that what you are using here? I appreciate the help!

Hi Christine, I used a larger size package (10 ounces) but if that size isn’t available by you then use the size you have and just adjust the amount of water according to the package instructions. All the other ingredients can remain the same. Hope this helps! Savor the Moments, Gwynn
