    Moroccan Chicken

    Chicken thighs give a deep rich flavor to this Moroccan Chicken recipe.

    Cinnamon, cumin and garlic give a layer of seasoning that combine sweet and savory notes typical of Moroccan cuisine.

    Add in bursts of sweet golden raisins with the brininess of olives and top it off with the occasional crunch of sliced almonds. Every forkful of our Moroccan chicken recipe will transport you to this far away land.

    With chilly nights and breezy days definitely upon us, it's the time of year that I begin dreaming about hearty comforting dinners. Chicken with warm spices fit the bill, don't you agree?

    Moroccan spices are among my favorite flavor combinations and so I blended warm cinnamon and earthy cumin together for a fabulous chicken thigh recipe that cooks itself in the slow cooker. 

    A delicious way to serve this chicken thigh recipe is with couscous, a traditional Moroccan dish.

    The sauce juices that form as this recipe is cooking will add lots of flavor to the couscous. And couscous cooks up in a jiffy! And Moroccan chicken with couscous is a perfect match.

    Of course, you can serve this chicken with rice too and it will be just as delicious.

    So go ahead! Just assemble the ingredients together in your crockpot in the morning, set the timer, and dinner is ready when you get home from a busy day!

    How to make Moroccan chicken with couscous

    Scroll down for the full recipe instructions and ingredient amounts in the recipe card below

    1. Arrange carrots, onion, raisins and olives on the bottom of your slow cooker. Top with chicken.
    2. Combine diced tomatoes with their juices, flour, garlic, cinnamon, cumin and kosher salt until blended. Pour over chicken and vegetables.
    3. Cook 7-8 hours on low or 3-4 hours on high, until chicken is thoroughly cooked and vegetables are tender.
    4. Stir until blended.
    5. Top with almonds and parsley. Serve with hot cooked couscous, if desired.

    • Add chopped dried apricots
    • Make with a combination of dark raisins and golden raisins

    Variations

    • Make this recipe with boneless chicken breasts in place of the boneless chicken thighs
    • Sprinkle with chopped cilantro

    Ingredients

    • 4 carrots, peeled, sliced 1-inch thick, 2 cups
    • 1 onion, chopped, 1 cup
    • 1 cup golden raisins
    • 1/2 cup pimento stuffed green olives
    • 1 1/2 lbs. boneless skinless chicken thighs, cut in 2-inch pieces
    • 1 (14.5 oz.) can diced tomatoes
    • 2 Tbs. flour
    • 1 clove garlic, minced
    • 1 tsp. ground cinnamon
    • 1/2 tsp. ground cumin
    • 1/2 tsp. kosher salt
    • 1/3 cup toasted sliced almonds
    • 2 Tbs. chopped parsley
    • hot cooked couscous, serving suggestion

    Instructions

      This dish is wonderful. The flavor was great, my husband loved it! The chicken was tender and held the flavor well. I served it simply over rice. I will surely make this a lot. Good enough for company!
