- 1 1/4 lbs. boneless skinless chicken breasts
- 2 Tbs. homemade taco seasoning or store bought taco seasoning
- 1 jar (16 oz.) salsa
- 1 1/2 cups shredded cheddar cheese
- 2 Tbs. chopped cilantro
- sour cream, sliced scallions and lime wedges

Preheat oven to 375F. Coat a 2-quart baking dish with non-stick cooking spray.

Season both sides of chicken with taco seasoning. Arrange in prepared baking dish. Top with salsa.

Bake 25 minutes. Top with shredded cheese. Bake until chicken is cooked through and cheese is melted, 5 minutes. Meat thermometer should read 165F.

Sprinkle with chopped cilantro. Serve with Fiesta Saffron Rice or hot cooked rice, if desired.

Serve your Salsa Chicken with sour cream, sliced scallions and lime wedges, if desired!

My husband made this for dinner while I was at work late, and it came out perfect. He said it was easy to put together, and I liked it because there wasn’t a mess in the kitchen! Way better than taco night! You will never have juicer chicken!
I have tried new things for my picky husband and family. Rarely do I hit a home run but this was a grand slam. The only thing I did different was I left off the cilantro. EVERYONE LOVE IT! This recipe has made the 1st string list!
