When it’s hot outside, it’s time to make our M&M Cookie Ice Cream Sandwich recipe!
Everyone loves an ice cream sandwich. They’re so much fun to eat and making homemade ice cream sandwiches makes them that much more delicious!
Large store bought cookies are bursting with vanilla ice cream and rolled in your favorite toppings.
Mini chocolate chips, shredded coconut, assorted sprinkles and even chopped nuts are all possibilities for coating the outside of your ice cream sandwich.
You can even combine topping such as mini chocolate chips, shredded coconut and chopped almonds for an almond joy flavor combination!
Prefer a small ice cream sandwich? Feel free to use smaller cookies. You will also be able to assemble more mini sandwiches, maybe even double the amount that the larger cookies make, with the amount of ice cream in the recipe.
I used store bought cookies from my grocery store bakery because using premade cookies makes it so easy to assemble these ice cream sandwiches without having to turn on your oven and bake cookies.

Ingredients

Ice Cream Sandwiches:
- 16 store-bought M&M cookies
- 1 half gallon vanilla ice cream

Instructions
Toppings:
- Place the toppings in small bowls or on flat dishes.
Ice Cream Sandwiches:
- Place 8 cookies, flat side up, on a flat surface.
- Top each cookie with a scoop of ice cream, dividing evenly between the 8 cookies.
- Place one cookie, flat side down, on top of each scoop of ice cream and press gently.
- Use an offset spatula or flat side of a knife and even out the ice cream on the sides of the ice cream sandwich.
- Roll the sides of each cookie sandwich in your favorite topping. You can eat them now or arrange the ice cream sandwiches in a single layer on a cookie sheet. Cover loosely with plastic wrap and freeze until ice cream is firm, at least one hour.
- Remove the sandwiches from the freezer and wrap each sandwich, individually, in plastic wrap.
