Curry Chicken Salad is nestled in tender lettuce leaves, a delicious dinner on a warm summer evening.
In the summer I make this Creamy Corn Chowder with fresh corn kernels in place of the canned corn. Summer corn adds a new level of freshness to this creamy soup.
You know I love easy when it's hump day and One Pot Unstuffed Peppers With Rice all cooks in one skillet. Yes, so easy!
I scream, you scream, we all scream for ice cream! So let's make a batch of No Churn Cookie Dough Ice Cream! So creamy and refreshing!
Make homemade pasta or cook up a box, either way, you'll want Fettuccine With Buttery Basil Tomato Sauce on your plate for dinner tonight.

Monday
When it's too hot to cook, Curry Chicken Salad is the no-cook dinner to make. Wrap up the chicken salad in lettuce leaves and serve as lettuce wraps.
Tuesday
Use fresh corn kernels to make this Creamy Corn Chowder With Bacon. Serve warm or at room temperature and enjoy a bowl of summer deliciousness!
Wednesday
Take the fuss out of stuffed peppers with this Skillet Unstuffed Peppers recipe. Even the rice cooks in the same skillet!
Thursday
My friend Lisa at Jersey Girl Cooks has a Caprese Pork Chops recipe for you that's filled with summertime flavors. And it's ready in just 30 minutes!
Friday
Love a BLT sandwich? Then you'll love this BLT Salad with its homemade creamy dressing. Top it with cooked chicken or beef for a main dish salad dinner.
Dessert of the Week
Bits of edible cookie dough and mini chocolate chips fill every spoonful of this easy homemade ice cream recipe. Serve it in a cone or in a cup drizzled with hot fudge sauce!
Brunch Recipe
Make pancakes or waffles and drizzle them with homemade Strawberry Syrup, either on its own or mixed with maple syrup, for a summery fruity topping. Add the simple syrup to coffee, tea or even sparkling water too!
Sunday Supper
When it's tomato season, Fettuccine With Fresh Tomato Sauce is on the menu for Sunday supper. Toss your favorite greens with a homemade Pesto Vinaigrette and you'll be all set!
Drink
Did someone say peaches and a slushy? Cool off with a Peach Bellini Slushy, typically made with frozen peaches, but go ahead and add in some fresh seasonal peaches too!
Bonus Recipe
Roasted beets, baby greens, goat cheese and nuts are tossed in a homemade red wine vinaigrette making Beetroot Salad a delicious side dish salad recipe.
