- In a medium saucepan bring strawberries, water and granulated white sugar to a boil over medium-high heat.
- Reduce heat to low and simmer until the sugar dissolves and the strawberries have softened, about 10 minutes
- Remove from heat and let the syrup cool.
- Strain the syrup mixture through a fine mesh strainer gently pressing the strawberries to release all of their juices. Discard the pressed strawberries.
- Transfer the fruit syrup to a mason jar or glass container. Seal and store in the refrigerator for up to 2 months.
Swirls of Flavor Pro Tips
- Pour the cooled syrup into ice cube trays and freeze for up to 3 months. The flavored ice cubes are a delicious addition to drinks.
- Be sure to remove the strawberry stems before adding to the saucepot. Stems can add a bitter flavor.
- Don’t press too hard on the strawberries when straining the syrup. Pressing too much can cause bits of fruit to fall through the strainer.
- Pancake syrup is a thicker syrup than this delicious strawberry syrup. This syrup will be thinner, which makes it perfect for dissolving in drinks.
- Add lemon slices for a strawberry lemon syrup
- This recipe can be easily halved to make a smaller batch of syrup
Substitutions
- Frozen strawberries, thawed, can be substituted for fresh strawberries.
- You can substitute other fresh berries in place of the strawberries
- Make a mixed berry simple syrup and replace half of the strawberries with blueberries or raspberries
Storage
- Store strawberry syrup in a mason jar or glass airtight container
- Syrup will stay fresh, when refrigerated, for up to 2 months
- As always, I find it helpful to visit the FDA website for food storage guidelines
