Slow Cooker Corned Beef & Guinness Reduction
1 onion, chopped, 1 cup
3 cloves garlic, minced, about 1 Tbs.
3 lbs. corned beef brisket
1 bottle (12 oz.) Guinness stout beer
3/4 cup packed dark brown sugar
1/4 cup horseradish mustard
3 Tbs. flour
1. Place onion and garlic in slow cooker. Top with corned beef.
2. Combine Guinness, brown sugar and mustard. Pour over corned beef.
3. Cook 7-8 hours on low or 3-4 hours on high.
4. Remove corned beef from slow cooker. Transfer liquid to saucepot. Stir flour and 3 Tbs. cold water until smooth and blended. Stir into saucepot. Bring to a boil over medium-high heat. Reduce heat to low and simmer until slightly reduced and thickened, 5-7 minutes. Serve Guinness Reduction with corned beef.
