How to make corned beef in the slow cooker

- Arrange the onion and garlic in the bottom of your slow cooker and top with corned beef.
- Stir together Guinness, brown sugar and mustard and pour over the corned beef.
- Cook 7-8 hours on low or 3-4 hours on high.
- Remove corned beef from slow cooker.
- Transfer liquid from the crockpot to a saucepot. Stir flour and 3 Tbs. cold water until smooth and blended. Stir into saucepot. Bring to a boil over medium-high heat. Reduce heat to low and simmer until slightly reduced and thickened, 5-7 minutes.
- Serve the Guinness reduction sauce with the corned beef.

- 3 lbs. corned beef brisket
- 1 bottle (12 oz.) Guinness stout beer
- 3/4 cup packed dark brown sugar
- 1/4 cup horseradish mustard
- 3 Tbs. flour

Hi! If I have a 7lb corned beef do I double the recipe? Thank you! Also, can I omit the horseradish and just use mustard?

I have not tried cooking a 7-pound corned beef in the slow cooker so I can't give you a definite answer on that but I do think that doubling the liquid might be too much. However, you can omit the horseradish!
