A rich and creamy cheesecake filling bakes up into cheesecake bars that will be a show stopping dessert on your table.
With the perfect balance of pumpkin spice, every bite is kissed by the warm holiday flavor of pumpkin pie spice.
I’ve elevated our pumpkin pie bar recipe to a level of bliss with a buttery graham crust flavored with a hint of cinnamon! Trust me when I tell you that cinnamon makes all the difference in the crust.

How to make pumpkin cheesecake bars

- Preheat oven to 325F.
- CRUST: In bowl combine graham cracker crumbs. 2/3 cup sugar and cinnamon. Stir in melted butter until moistened. Press crumbs onto bottom of prepared baking pan.
- CHEESECAKE: With mixer on medium-high speed, beat cream cheese and 1 cup sugar until smooth and creamy.
- Add eggs and vanilla and beat until blended.
- Add pumpkin puree, sour cream and pumpkin pie spice and beat on medium speed until smooth and blended.
- Pour cheesecake mixture evenly over crust and bake 45 minutes or until center is just set.
- Cool to room temperature on wire rack. Refrigerate at least 4 hours or overnight until chilled.
- TOPPING: Using foil overhang, lift cheesecake out of pan. Cut into 18 pieces and drizzle with caramel topping. Garnish each cheesecake bar with a dollop of whipped topping and a sugar pumpkin.

- 2 cups graham cracker crumbs
- 2/3 cup granulated sugar
- 1 tsp. ground cinnamon
- 8 Tbs. (1/2 cup) butter , melted

- 2 pkgs. (8 ounces each) cream cheese , at room temperature
- 1 cup granulated sugar
- 3 eggs
- 1 Tbs. vanilla extract
- 1 cup 100% pure pumpkin puree
- 1 cup sour cream
- 4 tsp. pumpkin pie spice
TOPPING:
- 1/2 cup salted caramel topping , such as Smucker’s brand
- 1 cup whipped topping
- 18 sugar pumpkins or candy pumpkins
