I make this creamy chicken vegetable soup with rotisserie chicken but if you have any leftover cooked chicken on hand you can always use that chicken instead.
I also shredded rotisserie chicken but you can chop the chicken if you prefer.

How to make homemade cream of chicken soup

- Heat oil in a medium saucepot.
- Add onion, carrots, celery, Italian seasoning, kosher salt and pepper and cook until vegetables are tender crisp.
- In a bowl combine evaporated milk and flour, stirring until smooth.
- Stir the evaporated milk mixture and chicken broth into the pot and bring to a boil. Boil until soup begins to thicken.
- Reduce heat to low and stir in chicken.
- Simmer until heated through and vegetables are tender, about 15 minutes.
- Stir in parsley.

Fantastic soup. Two changes - used Better then Bouillon for the chicken broth with 4 cups of water and used cream instead of canned milk. Oh - and I also diced all of the veggies. Thanks for posting this recipe. Great soup for a cold, foggy days.

We live in an RV full-time, and do a great deal of pantry cooking. Made this with 2 cans chicken breast drained, small bags of frozen California blend and one of just broccoli cut into smaller pieces, used up a handful of baby reds cut into small pieces, chopped onion, garlic, and a splash of cooking Sherry. Seasoned with S/P, Italian seasoning, Thyme, Rosemary. It was awesome!!

This a great recipe! It's flavorful and easy to make with ingredients most everyone has on-hand. The only thing I'll do differently next time is to stir in the flour near the end of sauteing the vegetables and cook it to eliminate The raw flour taste. It wasn't off-putting, but cooked would have given the soup a more pleasant taste and texture.

Regarding the raw flour taste, bringing the mixture to a boil and then simmering for ten minutes, or until the vegetables are tender, as mentioned in the recipe should be enough time to cook off any raw flour taste but I do like your suggestion of adding te flour to the vegetables! I adjusted the recipe to make it in a slow cooker. Halved the chicken stock and used raw chicken. On high for 3hrs. Added some Ditalini pasta 30 mins before the end. Very comforting and filling. I'll be making this lots!
