Hamburger browns with red bell pepper, onion and seasonings. Beef broth, rice and a can of Rotel flavored tomatoes round out this skillet dinner.
Now top that all with cheddar cheese and parsley and dinner is served!
Prefer ground chicken or ground turkey? Either will also work well in this recipe.
Yellow bell pepper or orange bell pepper can replace the red bell pepper and be very colorful too.

How to make cheddar beef and rice

- In a large skillet, cook the ground beef, onion, bell pepper, garlic, chili powder, salt and pepper over medium heat until the beef is browned and the vegetables are tender-crisp, stirring occasionally, about 7 minutes.
- Add the beef broth, uncooked rice, Rotel tomatoes and its juices, and Worcestershire Sauce to the meat mixture and stir until well combined.
- Bring to a boil over medium-high heat. Reduce heat and simmer, covered, until the rice is tender, about 20 minutes.
- Remove the skillet from the heat and sprinkle with the cheese.
- Cover the skillet and let stand until the cheese melts, about 5 minutes.
- Sprinkle with chopped parsley.

- You can cook the beef and rice mixture ahead, refrigerate, let come to room temperature, top with cheese and heat up in the oven or microwave.
- Be sure to cook this recipe in a skillet with deep sides
- You can top your beef dinner with sliced green onions
- If you decide to make this recipe with ground chicken or ground turkey I would recommend using chicken broth in place of the beef broth too
- I don’t recommend using a green bell pepper in this recipe because it is not as sweet as a red bell pepper
Substitutions
- Ground chicken or ground turkey can be used in place of the pound of ground beef
- An orange bell pepper or a yellow bell pepper can be substituted for the red bell pepper
- You can use garlic powder instead of fresh cloves of garlic
- A red onion or sweet onion will work just as well as the yellow onion
Storage
- Store any leftovers (not sure how that would happen though!) in an airtight container in the refrigerator.
- Leftovers will stay fresh for 2-3 days.
