- ½ teaspoon paprika divided
- 1 teaspoon kosher salt divided
- 1 onion sliced, 1 cup
- 2 small red and/or orange bell peppers seeded and sliced
- 1 pound baby Yukon potatoes cut into bitesize pieces
- 2 cloves garlic minced
- 2 Tablespoons minced fresh ginger
- 1 can full fat coconut milk
- ½ cup chicken broth
- 2 Tablespoons red curry paste
- ¼ cup cilantro leaves
- 2 scallions sliced

- Heat large non-stick skillet over medium-high heat.
