Cilantro Lime Chicken Recipe
Recently, I had the pleasure of attending a cooking demonstration at Jon Bon Jovi's Soul Kitchen restaurant in Red Bank, New Jersey.
Bon Jovi has a line of three seasonings, one of which was featured at this lunch and cooking demo.
Chef Emily worked her magic and demonstrated how to make several recipes with the nashville seasoning.
The three seasonings, original, cilantro lime and nashville, are filled with flavor and I couldn't wait to get in my kitchen and develop this cilantro chicken recipe.
Chicken breasts are seasoned with the cilantro lime JBJ Soul Seasoning and I also added the seasoning to the fresh corn topping.
Cilantro lime chicken thighs would be delicious too. Just replace the chicken breasts with boneless chicken thighs. Both types of chicken will make a delicious and easy chicken dinner, the choice is yours.

How to make chicken with corn salsa

- In a mixing bowl, combine corn kernels, cilantro, red onion, lime juice, lime zest, olive oil, 1 teaspoon cilantro lime seasoning and kosher salt. Stir until combined and set aside.
- Rub both sides of the chicken breasts with 1 Tablespoon cilantro lime seasoning.
- In a large non-stick skillet, heat 1 Tablespoon olive oil over medium-high heat and cook the chicken until cooked through, turning once. The internal temperature of the chicken should read 165F on a meat thermometer.
- Arrange the chicken on a serving platter and spoon the fresh corn salsa over the chicken. Garnish with lime slices and cilantro, if desired.
Recipe tips
- Fresh corn cut right off of the cob, in my opinion, has the best flavor
- Add chopped cherry tomatoes or grape tomatoes into the corn mixture
- Stir minced fresh jalapeno into the corn salsa for an added kick of heat
Substitutions
- Not a fan of fresh cilantro? You can easily substitute parsley for the cilantro although this will change the flavor of the recipe a bit
- Don't have the JBJ Soul Kitchen Seasoning? Feel free to use taco seasoning or chili powder and cumin with seasoned salt instead
- Boneless skinless chicken thighs would also be delicious in this recipe in place of the chicken breasts
- Green onion can replace the red onion
- You can use frozen corn kernels or canned corn kernels (drained) instead of fresh corn kernels but keep in mind that fresh corn will give you the best texture and flavor
Storage
- Store any leftover cilantro chicken and corn separately in airtight containers in the refrigerator.
- Leftover corn and chicken will stay fresh for 2-3 days
