Ingredients

Fresh Corn Salsa

  • 2 cups fresh corn kernels
  • 1/4 cup chopped cilantro
  • 2 Tablespoons minced red onion
  • 1 Tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon olive oil
  • 1 teaspoon cilantro lime seasoning , JBJ Soul Seasoning brand
  • 1/4 teaspoon kosher salt

Chicken

  • 4 boneless skinless chicken breasts
  • 1 Tablespoon cilantro lime seasoning , JBJ Soul Seasoning brand
  • 1 Tablespoon olive oil

Instructions

Fresh Corn Salsa

  • In a mixing bowl, combine corn kernels, cilantro, red onion, lime juice, lime zest, olive oil, 1 teaspoon cilantro lime seasoning and kosher salt. Stir until combined and set aside.

Chicken

  • Rub both sides of the chicken breasts with 1 Tablespoon cilantro lime seasoning.
  • In a large non-stick skillet, heat 1 Tablespoon olive oil over medium-high heat and cook the chicken until cooked through, turning once. The internal temperature of the chicken should read 165F on a meat thermometer.
  • Arrange the chicken on a serving platter and top with the fresh corn salsa. Garnish with lime slices and cilantro, if desired.

Notes

Substitutions
  • Not a fan of fresh cilantro? You can easily substitute parsley for the cilantro although this will change the flavor of the recipe a bit
  • Don't have the JBJ Soul Kitchen Seasoning? Feel free to use taco seasoning or chili powder and cumin with seasoned salt instead
  • Boneless skinless chicken thighs would also be delicious in this recipe in place of the chicken breasts
  • Green onion can replace the red onion
  • You can use frozen corn kernels or canned corn kernels (drained) instead of fresh corn kernels but keep in mind that fresh corn will give you the best texture and flavor
