    Variations

    Make it a loaded mashed cauliflower casserole!

    • Prepare recipe up until Step 5, cooking 45 minutes or until cauliflower is tender.
    • After removing the casserole dish from the oven, mash the cauliflower using a potato masher.
    • Then stir in cheese mixture and top with remaining 1/2 cup cheese.
    • Return to the oven as instructed in Step 6.

    What can I substitute in place of the low fat ingredients?

    If you're ok with a full fat recipe, you can use the following ingredients in place of the low fat ingredients in the recipe:

    • full fat shredded cheddar cheese
    • full fat sour cream
    • full fat cream cheese
    • bacon

    Make this recipe with your favorite shredded cheese or a combination of shredded cheeses in place of the shredded cheddar cheese

    How to make baked cauliflower

    1. Preheat oven to 425F. Spray a 2-quart casserole dish with non-stick cooking spray.
    2. Toss cauliflower, oil, garlic powder, kosher salt and pepper until evenly coated and bake, covered, until tender-crisp.
    3. Meanwhile, in small bowl combine 1 1/2 cups shredded cheddar cheese, sour cream and cream cheese until blended.
    4. Reduce oven temperature to 375F.
    5. Remove casserole dish from oven and carefully uncover.
    6. Stir in cheese mixture until cauliflower is evenly coated. Top with remaining 1/2 cup shredded cheddar cheese.
    7. Bake, uncovered, until tender, hot and bubbly.
    8. Top with bacon and scallions.

    • 2 Tbs olive oil
    • 1/2 tsp. garlic powder
    • 1/2 tsp. kosher salt
    • 1/4 tsp. pepper
    • 2 cups shredded low fat cheddar cheese ,divided
    • 1 cup low fat sour cream
    • 4 ounces reduced fat cream cheese ,at room temperature
    • 4 slices crisp-cooked turkey bacon ,chopped
    • 4 scallions ,sliced on diagonal
