Ginger Chicken Recipe
As you know, I’m all for creating quick, easy and fabulously delicious recipes and our roasted chicken recipe certainly fits the bill!
Just stir together a few ingredients, pour over chicken and bake.
A tasty sauce made with basic kitchen ingredients forms as chicken breasts simmer in the oven.
Brown sugar, Dijon mustard and apple cider vinegar are the base of this sauce. Fresh ginger and garlic add savory notes and cornstarch creates the glaze.
Sprinkle with the fresh flavor of cilantro, add a salad and sautéed broccoli and dinner is served!

- 4 boneless skinless chicken breasts , about 1 1/4 lbs.
- 1/2 cup packed dark brown sugar
- 1/4 cup whole grain Dijon mustard
- 1 Tbs. apple cider vinegar
- 2 tsp. minced fresh ginger
- 1 clove garlic , minced
- 1 tsp. cornstarch
- 1 Tbs. chopped cilantro

Preheat oven to 350F. Spray a 2-quart baking dish with non-stick cooking spray.

Arrange chicken in prepared baking dish.

In bowl combine brown sugar, Dijon, vinegar, ginger, garlic and cornstarch, stirring until blended and smooth.

Pour brown sugar mixture over chicken and bake 25 minutes, or until chicken is cooked through.

Spoon sauce over chicken and sprinkle with cilantro.

i do not like to use sugar any ideas for a substitute

Hi Eileen, You might be able to substitute honey for the brown sugar but I have not done a run through using honey in this recipe so I cannot guarantee the outcome. Happy cooking! Gwynn
