With blueberry season in full swing, why not make this easy vinaigrette to toss over a simple salad on a summer evening?
After all, warm weather and your favorite salad go hand in hand. Add in a homemade dressing and let your tastebuds do a happy dance.
The sweet flavor of this fruity dressing will complement a savory salad made with your favorite greens, thinly sliced red onion and some goat cheese crumbles.
Maybe stir in some fresh blueberries too! Top it with some cooked chicken and you'll have a fabulous main dish salad.

I love using an immersion blender to blend this dressing but you can also use a mini food processor or a blender. I love the little bits of blueberry skin in this vinaigrette. They lend texture and specks of color.
The addition of ginger adds a fresh flavor and lime zest is an ideal citrus complement to the blueberries and balsamic vinegar.
Although you can always make this vinaigrette with lemon zest or even orange zest!

- Gradually add olive oil and puree until blended and creamy.
- Stir in lime zest

- I prefer using extra virgin olive oil when making a homemade salad dressing, but you can also use olive oil
- I love this blueberry dressing when it's made with fresh blueberries but you can certainly use frozen blueberries too!
- Apple cider vinegar can be substituted for balsamic vinegar, however, you may want to increase the sweetener
- You can substitute lemon zest for the lime zest
