    Whipped Ricotta Dip is an easy appetizer recipe for a creamy dip flavored with fresh rosemary and lemon that can be made in just minutes. Simply cream ricotta cheese in a food processor with a few basic flavorings then drizzle with olive oil for a ricotta appetizer worthy of guests and holidays!

    Did I hear you say you need a last minute appetizer for New Year's Eve? I've got you covered. And it’s always good to have an appetizer recipe in your back pocket, well, not literally in your back pocket of course, that you can make for spur of the moment company.

    With a container of ricotta cheese, lemon juice, fresh rosemary, garlic powder, kosher salt and pepper, you can have this creamy cold dip on the table in mere minutes. Finish it off with a drizzle of extra virgin olive oil and let the good times roll!

    I love to serve this whipped ricotta appetizer with French baguette slices, preferably toasted or grilled (even better!), and trust me, every bite is delightful!

    You can also top it with nuts, seasonal fruit, fresh herbs……just let your imagination run wild!

    My personal choice, when in season, are fresh figs. OMG, the flavor combination, rosemary, lemon, sweet figs and creamy cheesy goodness is just to die for. You must try!

    Ricotta cheese is an Italian cheese made from whey. It can be made from buffalo, cow, goat or sheep milk whey that has been left over from the productions of other cheeses.

    • Place ricotta cheese in food processor or blender and process until smooth and creamy.
    • Add lemon juice, rosemary, kosher salt, pepper and garlic powder and process 30 seconds until just blended.
    • Transfer to serving dish and drizzle with olive oil. Garnish with additional fresh rosemary, if desired.
    • Serve with bread slices, crackers and/or your favorite vegetable dippers.
